Process: Carbonic Macerated Washed | Pink Bourbon

Tasting notes: Rose, Watermelon Candy, Pink Lemonade

Floral notes hit on the nose with notes of rose and hibiscus, followed by watermelon candy and pink lemonade. Undertones of pink bubblegum. Mellow grapefruit finish, round silky body. A really fun and approachable coffee that seems to somehow embody the color pink—from the name of its varietal to how it ultimately presents in the cup. 

About the process:
Cherries are soaked in water for 4 hours to clean the exterior of the fruit, sort out floaters, and hydrate the fruit. After the initial soak, the cherries are placed in an anaerobic tank to begin the initial phase of carbonic maceration fermentation. The cherries are then removed from the tank and depulped. The remaining mucilage-covered beans are then submerged in water for the final washing process.
